This course examines the key success factors behind foodservice management connecting the interrelated elements of marketing, operations, and finance with a shared emphasis on tactical and strategic issues and problem solving. Students learn by engaging in a series of team-based managerial and operational decisions through the highly animated Cornell Restaurant Administration Simulation Exercise (CRASE).


Prerequisites HADM 1210 or AEM 2210 or HADM 2230 or AEM 2225 and HADM 1361.
